The Food Solutions (FS) programme goal is to raise awareness of global food challenges and promote entrepreneurship as a possible career path.
The Food Solutions Programme - A journey towards an industrial symbiosis!
The FS is a 9-months (from March to November) learning-by-doing programme, supported by Academic and Industrial Partners.
Based on a challenge-based learning Food Solutions is creating environments where students thrive in the future transformation of the food systems.
The programme develops a combination of:
- Entrepreneurial skills to help students become a sustainable kind of food innovator
- Key technical skills tailored to their career ambitions in the sector
A unique aspect of this programme is that participants not only solve a real-world challenge and possibly turn them into viable businesses but also get to know different academic and industrial perspectives of the food system and increase the competitiveness of their future employing companies.
Each course provides a distinctly different challenge faced by the food industry. Participants will benefit from entrepreneurship and product development education to produce an innovative, tangible food solution. You will work within a multi-disciplinary team and be supported by your host University and mentored by experts from industry, research and science.
The FS Programme runs since 2018. For 2024 the 3 Food Solutions Challenges were :

During the 3 Final Events, the Student Teams present their prototypes during their Final Pitch, to the Industry Partners.
FS Challenge 1 : EcoBite Delights
Objective was to create sustainable and affordable (25% cheaper than in the current product market) bakery and/or patisserie solid food for a population with special dietary needs such as diabetes, lactose intolerance, or similar.

71 Graduates from Italy, Greece & Israel developed 14 Prototypes
Winners:
- 1st place : 1500€, Looops Team, Prototype : Biteloops
- We provide health-conscious individuals with affordable, single-packed sweet snacks. Our product is free from added sugars and artificial sweeteners, rich in micronutrients, and offer high nutritional quality — allowing them to enjoy a sweet treat without compromising their health or budget
- 2nd place : 1000€, Bitelicious Team, Prototype : Chickie
- Our cookie business is built around the idea of offering a healthy, eco-friendly snack option using chickpeas as the main ingredient. Chickpeas are rich in protein, fiber, and other essential nutrients, making them a popular choice for health-conscious consumers. Additionally, chickpea is a sustainable crop that requires fewer resources to grow compared to other protein sources, aligning with the growing demand for ecofriendly food products
- 3rd place : 500€, BreadEat Team, Prototype : BreadEat
- BreadEat helps people managing diabetes by providing a low-cost, low-carbohydrate bread that supports balanced glycaemic control without compromising taste or texture.
FS Challenge 2 : Pea-licious
Objective was to create convenient and nutritious ready-to-eat meal based on plant-based proteins (from rotatory crops) that meets the dietary preferences and developmental needs of children and fills the existing gap in the plant-based food market.

49 Graduates from Italy, Spain, Portugal and UK developed 9 Prototypes
Winners:
- 1st place : 1500€, LegumGo Team, Prototype : Legumkit
- A plant-based snack that is high in protein, healthy, and nutritious, while also being appealing and tasty for its target audience, which is children. The goal is to reach as many consumers as possible, made easier by its gluten- and lactose-free formulation. All of this will be done with a special focus on the environment and sustainability within the industry.
- 2nd place : 1000€, PeaYummy Team, Prototype : PeaYummy
- Soy yogurt with cocoa-flavored legume-based crunchy cereals. A vegan, source of protein and sustainable product for children.
- 3rd place : 500€, The Mighty pods Team, Prototype : Pea-Chata
- Pea-Chata’ is an innovative horchata-inspired beverage fortified with pea protein, vitamin D, vitamin B12, and calcium, formulated to meet the developmental needs of children aged between 8-12 in the UK.
FS Challenge 3 : ZeroWaste Design
Objective was reducing and/or replacing food packaging, reducing food waste, creating better supply chains and re-use structures.
Academic & Industry Partners : Aarhus University, University of Helsinki, Campden BRI, Zero Waste Europe, Puratos, Swiss Food Research and Danfoss
58 Graduates from Denmark, Finland, Hungary, Italy, Greece and Swiss developed 12 Prototypes

- 1st place : 1250€, Alessa Team, Prototype : Spud-savers
- Our edible dip cups, Spudsavers, crafted from food industry side streams, help small restaurants cut down on single-use paper waste, offering a sustainable, zero-waste serving solution.
- Shared 1st place : 1250€, Optilize, Prototype : Edilm
- Our Edilm sachet solution helps European food manufacturers replace single-use plastic sachets, reducing environmental impact and aligning with upcoming EU regulations banning single-use plastics.
- 2nd place : 1250€, YOUgurt Team, Prototype : YOUgurt
- We help environmentally and health conscious individuals with dynamic life to enjoy the benefits of yogurt anytime and anywhere by creating a long-lasting and innovative self-made snack characterized by personalized flavour, healthy properties and low environmental impact.

“Of course we always have to crown a winner, but as cliché as it sounds, everyone is a winner in these challenges. Food Solutions is designed as a ‘challenge’ for a reason – it will challenge our students to ideate, to work with a diverse team, to work through issues, setbacks and outside obstacles they can’t influence. Not having won doesn’t mean that there isn’t a feasible idea they can’t keep going with, and the network they take away is priceless.”

- Inna Zhuravlova, Alumna Food Solutions 2018 - with BanaBooms they launched a breakfast ceral made from surplus bananas to reduce food waste.
- Ariana Alva Ferrari, Alumna Food Solutions 'From leaf to root' Challenge 2020 - launched her prototype plant-based cheese from the fab bean and founded Viva la Faba.
